The study conducted by the University of Toronto has proved the theory that if pistachio is eaten with high carbohydrates like with bread, it actually slow the process of absorption of carbohydrates in the body and resulted the low level of blood sugar. Dr. Cyril Kendall:  Cyril Kendall is a Research Associate in the Department of Nutritional Sciences, University of Toronto, and the Clinical Nutrition and Risk Factor. Kendall is a 52 years old Guyanese national and a long term associate of David Jenkins, MD, PhD, the father of the glycemic index. He is the professor in the University of Toronto’s Dept. of Nutritional Sciences. He is the lead researcher of the theory of blood glucose level prevention by Pistachio usage. His theory says that eating one or two handfuls of pistachios once in a complete day reduces nine to twelve percent of Bad LDL cholesterol level as per Cyril Kendall, India has got more people with heart problems than anywhere in the world. As per the World Health Organization (WHO), 60 percent of the world’s cardiac patients will be Indian by 2010. As per Dr. Cyril’s views India’s situation is more critical where more and more young people are getting affected by heart diseases like stroke and peripheral vascular disease. Dr. Cyril had lost his son in the attack and after that incidence; he has decided to fight the criminal justice system because he felt like a victim of a witch hunt.
